This was a big deal for me as I’m more inclined to be tucked away in a kitchen developing our menu or in the cafes working with the teams rather than speaking in front of the great and good from the industry!
I’m pleased to say (after a few technical issues with a microphone) it went really well and I even had a few operators approach me afterwards to find out more. I hope we inspired a few people and it’s great that people are starting to think more sustainability.
